Recipe for the famous Beef salad called “Salata de boeuf”

Beef salad is a traditional Romanian and Moldavian dish, usually served on festive and special occasions. It’s a combination of finely ground beef and vegetables, tossed in mayonnaise and finished with pickled vegetable toppings. You can also find this beef salad… without beef! Indeed, a large number consume it without incorporating any meat.

BEEF SALAD RECIPE

Ingredients for approximately 4 servings – Preparation time: 1h00 Cooking time: 3h30

-500g lean beef

– 500g celeriac

– 3 carrots

– 4 potatoes

– 300g peas

– 4 pickles in brine or vinegar

– 1 onion

-homemade classic mayonnaise

The step-by-step recipe

Start by boiling the potatoes in their jacket and peeling them while they are still hot. Cut them into cubes of about one centimeter on each side. Cut pickles the same way. Boil the other vegetables (celeriac, carrots, onion and peas) in salted water. For more optimal cooking, be sure to cut the celeriac in 4, let it simmer for 3 hours. In the same way cook the meat separately in salted water with a bay leaf and a few peppercorns, until the meat is well softened. Cut the meat, the celeriac and the carrots into cubes and mix them with the pickles and peas. Add salt and pepper.

Prepare a mayonnaise with two or three eggs and add it to the vegetable and meat ingredients. Mix well. Save some mayonnaise for decoration. Romanians and Romanians love the unusual decorations of beef salads. The salad should be placed on a tray and leveled.

Then cover it with a thin layer of mayonnaise and use olives and juliennes of vegetables as well as slices of cooked egg to draw decorations. The result depends on your imagination.
