FERMENTATION
Preferably 4 to 5 days maceration on the stick for the extraction of coloring and aromatic components, followed by a 4-day maceration after fermentation to complete the extraction of tannins. Fermentation at controlled temperature.

TASTING NOTES
Olfactory: dried plum covered with mulberry.
Taste: dry plums, with hints of cinnamon.
