Vineyard: Dealu Mare, DOC CMD

Nose: fruity, complex, forest fruits (blueberries, blackberries), dried plums, raisins but also vanilla, cinnamon

Taste: red blackberries, ripe fruits supplemented with dark chocolate; an elegant but strong wine, with fine tannins that blend perfectly with the acidity; balanced, with a feeling of softness, a long and persistent finish

Food to accompany: especially red meat, such as Argentinian beef, baked lamb, game meat, mature cheeses, but also dark chocolate dessert

Wine temperature: 16-17 ° C

Aging potential: minimum 12 years

Cuvée charlotte 2012 joins three grape varieties again: cabernet sauvignon, feteasc? neagr? and merlot, selected from the most representative lots of our Ceptura vines and matured between 8 and 14 months in oak barrels.
The wines chosen for Cuvée Charlotte are selected with particular care: from batches where the grapes are ripening, over 10 years old, and optimal exposure by benefiting from more careful monitoring during the growing season. They are vinified in concrete containers, by the traditional method (manual grain immersion, post fermentation maceration, covering only Ravac wine, without pressing). Secondary fermentation (malolactic) is done in barrels aged 1 to 3 years, and maturation in barrels lasts between 8 and 14 months, depending on the grape variety (feteasca neagr? spends less time in contact with oak, cabernet sauvignon passes more time). As the wines mature, they are taken from the barrels into small stainless steel containers, where they wait until the entire batch is ready for final assembly. This operation can last up to 12 months, depending on the quality of the wine’s aging potential. The entire batch is bottled in a single draw and does not suffer from major conditionalities; we have decided to let Cuvée Charlotte express itself in its natural form. The refining in the bottle lasts a minimum of 9 months; the 2012 harvest was bottled on February 15, 2017.
