Abandoned towards the end of the Soviet period because it was considered too difficult to work, this vineyard has come back to life, it is managed according to the principles of biodynamics in respect of this natural and wild environment so particular to the mouth of the Dniester river or the Pelicans are the king birds.
Thanks to the Mediterranean-type climate in summer and the harsh cold of the continental winter, the estate’s vines enjoy a particularly healthy climate for viticulture, the grapes are harvested very late in the season, from the beginning of October to the beginning of November in order to to obtain not only the optimum maturity in terms of sweetness but above all a full maturity of the tannins.
The estate mainly produces red wines for laying down, very fruity and elegant without any oenological additives other than sulphur. Aging in wood is very limited in order to preserve the natural fruitiness of the wines and minimize human intervention in the winemaking process. A long aging of three to four years in large underground concrete vats gives the wines time to mature naturally. , to soften their tannins while preserving their fruitiness and freshness.
