Here is a puff pastry recipe Zacusca allowing to use the famous Zacusca from Romania other than on a simple slice of bread. It’s just as good, if not better for cheese fans!

Ingredients:

  • 400g puff pastry (or rectangular puff pastry)
  • 1 jar of zacusca with oyster mushrooms (or other)
  • 150g grated cheese
  • 1 egg, beaten with a fork to mix well
  • Fine salt and freshly ground pepper
  • optional: fresh thyme

Instructions:

Preheat the oven to 180°C and line a large tray with parchment paper.

Using a rolling pin, roll out the puff pastry into a rectangle, then cut into 12 equal squares.

Divide the contents of a jar of zacusca over 6 of the squares.

Sprinkle half of the grated cheese over the zacusca.

Then cover the 6 filled squares with the remaining squares and seal the edges by pressing lightly with the tip of a fork around the square.

Coat each puff pastry with the beaten egg and sprinkle with the rest of the cheese.

Bake for 12 to 15 minutes or until the puff pastry is golden brown and crispy on the outside.

Sprinkle with salt and pepper, fresh thyme if you have it, then serve immediately.
