Romanian zacusca: a grilled vegetable tapenade

Romanian Zacusca or vegetable caviar is a spread made only from vegetables.
It is a product traditionally made in Transylvania, and only there.
At the end of summer and t fall, with the abundance of vegetables, every family strives to waste nothing and makes this tasty spreadable vegetable paste.
The Romanian Zacusca can be stored in tightly sealed jars all winter or more. It is eaten on a piece of bread, as an aperitif, with a few slices of sausage, or a good smoked or fresh cheese.

How is it made?

The composition varies according to tastes and recipes, but we are going to tell you a few secrets…

The first is to first grill the vegetables: eggplant, peppers. These will be easier to peel (remove the skin), and at the same time will take on a smoky taste.

The cooking

All the grilled vegetables are then chopped with a wooden chopper (turning to the texture of caviar), and everything is mixed to be annealed with fried onions, a little oil, bay leaf, tomato flesh, salt and pepper…

Cooking should be done over low heat, a slight boil is enough. It’s about homogenizing the flavors, not destroying them!

Depending on the quantity prepared, this step can take several hours.

The preparation is stored in sterilized and hermetically sealed jars.
