Socata Central Transylvania

Today, we propose you the socata recipe!

It is actually a traditional sweet drink in Transylvania, made from elderflowers, similar to lemonade.

This drink is very low in alcohol, but it has a special taste and flavor, which immediately brings to mind the first weeks of summer.

To prepare a “socata“, you need elderflowers – 5 or 6 small bouquets (as you can see on the photo), 500g of sugar (to be measured according to taste, or to be completed with honey once the preparation is finished), four lemons, and 3 liters of water.

To start, put the freshly picked flowers in a glass jar with a capacity of 3 liters. We advise you to pick sunny flowers (left the flowers in a place that is too shady, humid, or after a rain).

We also advise you not to pick your flowers at the edge of the road, prefer a park or a field, away from traffic. So you can use your flowers without rinsing them, and have a better taste!

Add the lemons cut into slices, the sugar, and a few grains of rice.

Cover the jar with a cloth and put it in a sunny place.

If the temperatures are rather high, the drink will be ready in just two days, otherwise the process can take up to a week, depending on the quantities used.

The appearance of small bubbles inside the jar heralds the start of fermentation and the time to strain the liquid.

Fill glass bottles that you can then store away from the sun, in a cool place (preferably in the refrigerator for longer storage).

Otherwise, you can also use a syrup, such as those present in our store.
