It is usually made from cow&#8217;s or sheep&#8217;s milk.<\/p>\n\n\n\n<p>Commonly consumed, it is kept in metal cans or wooden casks filled with brine or salted whey. It is left to drain in stamens of which it retains the imprint and broken down into cubic blocks for consumption.<\/p>\n\n\n\n<p>It is sometimes found matured for several months in brine.<\/p>\n\n\n\n<p>The designation of origin of a &#8220;telemea&#8221; produced in the center north of Romania is a protected designation.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"405\" height=\"330\" src=\"https:\/\/centraltransylvania.com\/wp-content\/uploads\/2019\/04\/products-telemea.jpg\" alt=\"Romanian Maturated Sheep Cheese ''Telemea'' 300gr - DELACO\" class=\"wp-image-9806\"\/><\/figure>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">The Ca?caval<\/h2>\n\n\n\n<p>Ca?caval (pronounced cachcaval), is a pressed cheese similar to Emmental. Of Sicilian origin, it spread a long time ago in the Balkans, and became a reference among Romanian cheeses among others.<\/p>\n\n\n\n<p>It is usually made from cow&#8217;s or sheep&#8217;s milk.<\/p>\n\n\n\n<p>It is sometimes matured for 6 months and takes on a more pronounced taste, much appreciated by cheese lovers.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"334\" height=\"272\" src=\"https:\/\/centraltransylvania.com\/wp-content\/uploads\/2021\/03\/cascaval-afumat-de-acasa-405x330px-334x272.jpg\" alt=\"Cascaval fum\u00e9 PACHET DE ACASA 350g\" class=\"wp-image-17075\"\/><\/figure>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Other Transylvania cheeses<\/h2>\n\n\n\n<p>There are many other types of cheese in Transylvania, including:<\/p>\n\n\n\n<p>&#8211; Ca? (pronounced cach), made from milk and rennet. It is rennet then beaten then remodeled into a cheese.
